Tatsuya Ohtake
After 10 years of training at the famous restaurant 'Takada Hassho' in Gifu, he served as the manager for 6 years at 'Kogane Hassho' and 'Wakamiya Hassho'. He became independent in Nishiazabu in 2017. A skilled chef who continues to explore the depth of Japanese cuisine by incorporating new ideas based on traditional techniques and creating delicate flavors that make the most of seasonal ingredients.
